How Long Will Beef Tenderloin Keep in Refrigerator

Beef Tenderloin in the refrigerator

I just bought a beef tenderloin for Christmas that Im unsure how to keep until Christmas. I only need about 3/5 of it for Christmas so my plan is to trim it up, and freeze it into two sections- one that I defrost at the end of next week and one that I defrost at a later time. Since it is vacuum sealed though, Im wondering if I can keep it like that in the refrigerator until Christmas? I typically freeze meat when it has been that long but if it could sit in a grocery store for a week, couldnt it sit in my fridge for a week too?

Possibly. More than likely, yes. But we cannot guarantee it.

It depends on how long since it was processed and the day you bought it. And we don't know that answer. The safe bet is to freeze it, that way you know it's safe. Or risk it and roll the dice.

If it's in cryovac it should be good in the fridge until Christmas.

Depends on if you are referring to a whole, untrimmed, PISMO beef tenderloin or something else but, more than likely, YES! It will keep like that in the refrigerator until Christmas.

In this situation I would look at the sell by date and see if a week makes it.

I am not sure if you planned to open and trim it then re vac seal it? If so maybe its better to not open it now and wait till right before go time to open and trim. Not sure but im thinking opening could introduce something to spoil it faster

If you leave it sealed until Christmas it will be fine in fridge. I have wet aged a full tenderloins for three months on several occasions and it is great. Cut off what you don't wanna cook then and freeze it.

Just put it in the sous vide until Christmas

I remember the pic of those steaks!

The sell by date on it was yesterday. It's a beautiful piece of meat, wonderful color. I would open it tomorrow, trim it and cut it nearly in half. Then I would wrap each half in a ton of cellophane then double bag it in ziploc freezer bags. I've done this with other meat with no problems and no freezer burn but I just don't know if it's worth the hassle here. It's only a week. I would be defrosting it again by next Thursday. I'm really thinking I will keep it vacuum sealed in the coldest part of my fridge and not open it up.

I would've waited until next week to buy it but with the Biden shortages I couldn't risk not being able to get it.
